No-Bake Chocolate Drop Cookies

This is one of my favorite cookie recipes, courtesy of Grandma Rose, as well as some modifications with the help of Food.com. This recipe works best with a stovetop, but if you are limited to dorm living they can also be made with a microwave. They aren’t the prettiest of cookies but they sure are delicious.

This will take around 10 minutes to make, as well as an hour or overnight for the cookies to cool. Also note that these do contain peanut butter if you have an allergy. 

Ingredients:

  • 2 cups of sugar
  • ¼ cup butter
  • ½ cup milk
  • ¼ cup cocoa
  • 1 teaspoon vanilla
  • ½ cup peanut butter
  • 3 cups quick oats

Instructions:

  1. Line a baking sheet or a few plates with parchment paper or wax paper for the cookies to cool.
  2. Mix the sugar, butter, milk, cocoa, and vanilla in a saucepan over medium heat, stirring occasionally, and then let it boil for 1 minute. 

If you don’t have a stove, melt these ingredients together in the microwave for 2 minutes. Stir. And then microwave for another 2 minutes until all of the ingredients are melted together. Stir to remove any clumps. 

  1. Remove from heat (or the microwave) and stir in the peanut butter and oats. If your mixture is looking too runny, try adding some more oats, but note that too many oats will make the cookie dryer. 
  2. Drop the cookies by spoonful onto your parchment paper and allow them to cool in the fridge or freezer. They should be cool after an hour, but I usually let them sit overnight. Once cool you can store them in a tupperware in the fridge or freezer. I prefer mine in the freezer as this will make them last longer.
